Our Freezer Recipes

Let me start. Our whole family loves lasagna. Here is how it's cooked.

Freezer Lasagna.

cottage cheese 10 oz
spaghetti sauce 32 oz
1 cup cooked ground beef
uncooked lasagna noodles
shredded mozzarella 2 cups
1/2 cup water
2 eggs
chopped parsley, 1/3 cup
onion powder, 1 teaspoon
pepper, salt


In a bowl, mix cottage cheese, mozzarella cheese, eggs, parsley, onion powder, salt and pepper.
In another bowl, mix together spaghetti sauce and cooked ground beef. In a baking dish or spread 3/4 cup meat sauce on the bottom. Layer uncooked noodles on top of the meat sauce. Next spread 1/2 of the cheese mixture and 1-1/2 cups meat sauce. Layer more uncooked noodles on top. Spread with remaining cheese mixture. Top with remaining 3 noodles and remaining meat sauce. Pour water around the outside edges.
For freezing, place the dish in a 2-gallon freezer bag, don't wrap in the foil, because the acid in the tomato sauce will make holes in the foil. 
Before cooking it's better to thaw the lasagna overnight in the refrigerator. Bake covered at 375°F for 45 minutes. Uncover and bake an additional 15 minutes. If you cook straight from the freezer, add 20 minutes to the cooking time.

Cheesy Rotini

1/2 lb corkscrew rotini noodles
1 lb extra lean ground beef
1 cup yellow onion, chopped
1 small green pepper, chopped
1 28oz can tomatoes
1 6oz can tomato paste
1 4oz can sliced mushrooms
1 tsp salt
1/2 tsp basil
1/2 tsp oregano
1/4 tsp garlic powder
1/4 tsp red pepper flakes
2 cups Mozzarella cheese, grated
1 cup Parmesan cheese, grated

Cook rotini noodles according to package instructions. In large skillet, brown ground beef with onions and green pepper until cooked through. Add remaining ingredients except for the two cheeses. Stir well and cook over low heat for 20 minutes. Add cooked rotini noodles. Pour into casserole, top with 2 layers each of Mozzarella and Parmesan. Bake in a preheated oven at 350F for 30-45 minutes, or until cheese is melted. Cool and freeze.

On cooking day:
Defrost, and bake in preheated 350F oven for 15-20 minutes or until heated through.

Hi. This is my favorite recipe: a great homemade sauce

Homemade Gravy

6 t. spoon butter or margarine
6 t. spoon flour
4 cups any broth
salt & pepper to taste

In a large skillet, melt butter, then whisk the flour into the butter. Just as the flour begins to brown, begin slowly adding broth, whisking to prevent lumps. Once all stock is in, bring to a boil while continuing to whisk. Remove skillet from heat, season with salt and pepper if desired. Allow to cool and freeze in portions. If you want single servings, freeze in an ice cube tray, then store in ziploc once frozen.

Hi, Anastasia. This is a good idea to share the recipes. Here is mine:

Pesto Hamburgers

3 lbs ground beef
3 bread slices
2 onions
3 eggs
3/4 cup Parmesan cheese
6 tbsp pesto
3 garlic cloves

In a large bowl, combine egg, bread crumbs, chopped onion, cheese, pesto and chopped garlic, mix well. Add ground beef, stir. Divide into 12 and make 12 burgers, making sure to depress the center of each slightly. Flash freeze on cookie sheet, then transfer into freezer ziploc bag container. Or seperate each with wax/parchment paper, and freeze stacked.

Defrost in the fridge the night before cooking and grill.

This is my vegetarian recipe:

Cabbage Casserole

4 cups cooked brown rice
1/2 cup olive oil
1 onion, chopped
1 green pepper, chopped
1 cups mushrooms, chopped
4 cloves garlic, minced
1 cups sunflower seeds
1 head cabbage, shredded
4 cups tomato juice or tomato puree
Optional sweet-sour tang:
1/3 cup brown sugar (add to sauce)
3 tablespoons cider or rice wine vinegar (add to sauce)
1 cup raisins (add to rice with mushrooms)

In deep, heavy pot saute onion, pepper and mushrooms in oil until tender. Add garlic and seeds. Add rice.

In large pan layer 1 cups juice or puree,then 1/3 of cabbage (approx.) then 2 cups rice and vegetable mixture.

Repeat twice. Pour remaining juice or puree over top. Cover and freeze.

To serve, place directly into 350 degrees oven from freezer. Bake 1 1/2 - 2 hours or more until cooked through.

Here is my recipe: very easy and delilcious cranberry chicken.

6 chicken breasts
2 tbsp melted butter
1 tbsp soy sauce
1/2 cup cranberry sauce
1/4 cup orange juice
1/8 tsp cinnamon

Just combine all ingredients in a freezer container or Ziploc bag and freeze.
Before cooking thaw, pour cranberry chicken into a casserole dish. Preheat oven to 350 degrees, and bake for about 30 minutes.

This is my favorite: Chocolate Chip Cookies - Yummy!

1/2 cup sugar
1/2 cup brown sugar
1/2 cup margarine or butter
1 egg
1 1/2 cups flour
2/3 tsp baking soda
1/4 tsp salt
2 cups chocolate chips

Mix sugar, brown sugar, and butter or margarine. Add vanilla and the egg and mix everything together. Add the flour, baking soda and salt and mix again. Fold in chocolate chips. Spoon tablespoon size balls on a baking sheet. Bake at 375 degrees for 8 to 10 minutes.

They stay perfectly fresh in the freezer for a long time, so you can make as many as you want at once.
